Think tender veal cheeks slowly cooked for four hours in Cantillon kriek, a vol-au-vent filled with sweetbreads, poularde, quenelles and mushrooms, served with perfectly crispy homemade fries. Or the famous Zenne Pot — cabbage stewed in gueuze, Bloempanch (Brussels black pudding), sausage and shellfish, bold and unapologetically local.
Ingredients are proudly sourced and transparently listed. Grey shrimp and cod from the North Sea, leeks from Nantes, veal from Limousin. Nothing is weighed mechanically; every plate reflects the uniqueness of the product itself.
